Simple and Delectable Oyster Mushroom Pasta

Our grow kits are super easy to use and bring the (literally!) freshest gourmet mushrooms straight to your table. Grey oyster mushrooms are a delectable choice when it comes to the Queendom of Fungi and there are many ways to use them, but we here at Fungi Folks think one of the most delicious options is in a simple pasta. Here’s a quick recipe:

 

250g oyster mushrooms

200g pasta, your favourite shape

1-2 garlic cloves, finely chopped

handful of parsley, roughly chopped

1-2 tbsp your oil of choice

1 tbsp butter

 

While your pasta water is coming to the boil, pull or chop your oyster mushrooms into strips. Then chop some garlic and parsley ~ as much or as little as you like ~ and set these aside. We use 1-2 garlic cloves and a good handful of parsley. Pour the oil in a heated frying pan and sauté the mushrooms on medium high, moving them around the pan every now and again to brown evenly. After 3 minutes, add your pasta to the boiling, salted water ~ spaghetti is, of course, a great choice but on the Fungi Folks farm we also like tagliatelle or rigatoni for this.

Continue stirring the mushrooms, add salt to taste and when they are just about brown and crispy, make a space in the middle of the pan, add a knob of butter (or your favourite vegan alternative). Add the garlic to the melted pool of fat and mix for about 1 minute before tossing it through the mushrooms. Your pasta should be just about ready by now. Good time to tong it out into the frying pan, chuck in the parsley and mix to combine. Serves 2, but the recipe doubles easily!
